Haleakala Creamery makes its goat milk caramel in the traditional cajeta style, which is a type of dulce de leche made with goat’s milk. Originating from Mexico, cajeta is a confection of thickened syrup made of sweetened, caramelized goat's milk.
A simple recipe, milk and sugar simmer for hours, slowly becoming a rich caramel sauce. Locally sourced ingredients are added to each flavor as they near completion. Then carefully fill, seal, and label each jar. The caramel is now ready to be shared.
